Recipe Timeout: Sausage Macaroni Casserole

Part one of today's lesson is my sister Michael's Sausage Macaroni Casserole...a household favorite!

Ingredients:
1 lb. bulk Italian sausage (or get links and remove casings)
1/2 green pepper, chopped
1 medium onion, chopped
2 Tbsp. flour
1/2 tsp. salt
1.5 cups milk
2 cups shredded cheddar cheese, divided
8 oz. elbow macaroni, cooked and drained

Instructions:

Preheat oven to 400. Saute sausage, onion and green pepper in skillet. Pour off drippings. Add flour and salt; blend well. Cooking over low heat, gradually add milk, stirring constantly until thickened (it won't get completely thick). Stir in cooked macaroni and 1 cup cheese. Spoon mixture into a lightly greased 1.5 quart cassarole dish. Sprinkle remaining cheese on top. Bake for 25-30 minutes.

This is an easy, delicious comfort dish that your family will be asking for again and again.  Enjoy!
