Recipe Timeout: Grecian Stuffed Chicken

Are you ready for the start of football season TONIGHT?!?  New Orleans is playing at Green Bay at 8:30 ET on NBC.... 


Today's recipe is courtesy of my cousin, Jan. How can you go wrong with chicken stuffed with cheese and wrapped in bacon???

Ingredients:


6 boneless, skinless chicken breasts
salt and pepper to taste
10 oz. frozen chopped spinach, thawed
8 oz. feta cheese, crumbled
½ cup mayonnaise
1 clove garlic, minced
¼ cup all-purpose flour
½ teaspoon paprika
6 strips of bacon


Instructions:
 
Preheat oven to 325°.

Cut a pocket into each chicken breast.  Salt and pepper to taste.

Drain spinach and squeeze out any additional liquid.  Combine with feta cheese, mayonnaise and garlic.  Stuff mixture into chicken breasts.

Combine flour and paprika and lightly coat stuffed chicken breasts.  Wrap one piece of bacon around each and place on a baking rack (sprayed with cooking spray) in a baking dish.  Bake uncovered at 325° for one hour or until chicken tests done.

Serves 6
